The Napoli Oven - Wood Burning Oven
The Napoli Oven combines the ancient Neapolitan cooking tradition with new oven manufacturing techniques with attributes similar to the Traditional Oven and using 10cm thick refractory stone parts. The oven is available as wood fired, gas fired or wood and gas fired combination which uses wood or gas or both at the same time, depending on your preference.
Externally sizes are the same as the 160 x 160 Traditional Oven, but the Napoli Oven has a dome height of 48cm. With the flame set lower than the baking top the oven is able to reach higher temperatures more quickly, this also minimises the energy required to reach the appropriate cooking temperature.
The Napoli Oven comes equipped with an ash grill and collecting drawer making it easier to clean. A marble ledge at the mouth of the oven eases the sliding into and out of the oven of cooking implements and product.
The oven is supplied with either a standard 54cm mouth or a 82cm mouth is available upon request, to allow for cooking larger flat pizzas.
